China Buffet Recipes--Stir Fried Mushrooms?

I am trying to find any similar recipes to the packaged chinese food restaurants around the country. The first thing I am after is stir fried mushrooms. I think it is simply button mushrooms in the "Special Sauce." What is in it? Please no juvenile jokes. I already know the answer to those...China Buffet Recipes--Stir Fried Mushrooms?
I think it depends on what type of Chinese food you are eating - Szechuan, Mandarin, Cantonese, etc.



Where we have dined, it's more of a garlic sauce, garlic pieces with maybe oyster and/or soy sauce in it, and perhaps some ginger added for flavor - and some may add lime or lemon juice as the citrus enhances the flavor. I believe they boil the sauce first, and then add blanched mushrooms.

But some places cook the mushrooms first, then add the sauce - so again it all depends on the style.

Most chinese buffet will use one of 2 sauce for most veg, either a black bean sauce or a garlic sauce with oyster sauce in it.



As they leach alot of water, some will cook them twice, or make the sauce and thicken it a bit more than others, I make them with an assortment of mushrooms, fresh and dried, shiitake, cremini, enoki and king oyster mushrooms.



I am a former chef and a vegetarian now and find them a tastey alternative to meat.
