Old Country Buffet Eggs Casserole?

I went to the old country buffet a few months ago. They have this egg casserole with broccoli and cheese that I loved. I have tried to replicate this to no avail. Just an FYI there is no rice or stuffing in it. It does have a slight bread like quality to it, but not like bread pudding or bisquick. Please don't respond if your recipe has rice, stuffing mix or bisquick in it.Old Country Buffet Eggs Casserole?

Broccoli %26amp; Cheese Fritatta



1/2 tsp oil

1 1/2 cup egg beaters(r) 99% egg substitute

1 tbl minced fresh basil OR 1/2 teaspoon dried

1/2 tsp reduced-sodium soy sauce

1/2 cup diced cooked red-skinned potatoes see preliminaries

1 cup cooked broccoli florets see preliminaries

1/4 cup sliced pimiento

1 tbl minced green onions

1/3 cup grated lowfat cheddar cheese

1 pch ground black pepper



To cook the broccoli and potatoes, steam them until just tender when pierced with a sharp knife or skewer, about 5 minutes. If the broccoli is ready first, remove it with tongs and cook the potatoes a few minutes longer.

Heat oil in a large non-stick frying pan with a heatproof handle over medium heat.

In a large bowl, whisk together the egg substitute, basil and soy sauce. Add to the heated pan. As the eggs cook, gently push the outer edges toward the center with a spatula until eggs are about half set. Do not stir.

Sprinkle with potatoes, broccoli, pimentos and green onions.

Place pan under broiler, 5-6 inches from heat. Broil 2-3 minutes.

Sprinkle with the cheese and broil 2 minutes more, or until the cheese is melted. Sprinkle with pepper. Slice into wedges; serve immediately.





Or;



3/4 lb broccoli florets, (about 2 cups)

1 tbl olive oil

1/2 cup finely chopped onion

1/2 cup chopped red bell pepper

1 cup feta cheese, crumbled (4-oz.)

1/3 cup wheat germ

1/2 tsp paprika

6 lrg eggs



You may serve this vegetable-rich main dish just out of the oven, or bake it ahead and serve at room temperature.

Preheat oven to 325 degrees. Grease 12-inch quiche dish or round cake pan.

Steam broccoli until crisp-tender; remove from heat and set aside to cool.

Meanwhile, in medium skillet, heat oil over medium-high heat. Add onion and bell pepper and cook, stirring often, until vegetables are soft, about 5 minutes. Remove from heat.

When broccoli is cool enough to handle, cut into small pieces. In medium bowl, combine broccoli, sauted onion and pepper, cheese, wheat germ and paprika; stir briefly to mix. In separate bowl, beat eggs to blend yolks and whites.

Stir eggs into vegetable mixture, then pour egg mixture into prepared dish.

Bake until eggs are set, about 30 minutes. Remove from oven and serve warm, or let cool and serve at room temperature. To serve, cut into wedges.Old Country Buffet Eggs Casserole?

6 -8 bread slices

10 beaten eggs

3 C milk

s/p

dash hot sauce

2C cheese shredded

broccoli cut up pieces



line a 13x9 pan with the bread, mix eggs, milk, seasoning, pour over bread add broccoli and top w. cheese let sit over night

I have one that you butter bread and place butter side down in a glass cassarole 13x9 (line the bottom of the pan) brown a pound of sausage (crumbled ) drain and cool the sausage, then sprinkle it over the bread, then you beat the eggs 12 of them add one cup of milk or cream, salt and pepper to taste. You can ad onions peppers or veggies of choice just sprinkle over the sausage, then sprinkle over 1 cup of cheese. and pour the eggs on top of all. cover tightly and put in the fridge over night. in the am bake for 30 or so minutes until set and cover with some more cheese and bake until the cheese is melted. at 350 degrees.

May not be what you are looking for but it is good. And it serves a crowd and a half!
