Perhaps it's because geese aren't commercially raised like turkeys and ducks to an extent. It would make it an expensive offering for the dining room when not too many people would probably order it. Now I know you're thinking about Dickens' Christmas Carol when at the end Scrooge buys the goose for old Bob Cratchit's Christmas dinner. This is really a good question. Maybe someone else could offer some ideas.
